Mila’s Gluten Free Bread

1cup/100g hemp flour
1cup/100g coconut four
1cup/100g buckwheat flour
½ chia seeds
1 cup/100ml goat’s milk
3 eggs
1tbs/7g dried yeast
5tbs olive oil
1 tsp sea salt

Mix all flour and chia seeds with salt. Beat the eggs with warm milk and yeast. Combine all ingredients in the mixer. I found it very sticky so I took it out from the mixer and kneaded it with my hands.
Put the dough in a warm place for approximately an hour. Divide the risen dough into two parts and put it into baking trays. I have used silicon forms as you don’t have to oil them and they are very easy to clean.
Bake it in the oven for 4o min on 180 degree Celsius.
The bread is very heavy and has a consistency of Irish soda bread. It tastes wonderful and it’s gluten and wheat free.
