Mila’s Gluten Free and Dairy Free Bread

150g tapioca flour
150g gram/ chickpea four
150g buckwheat flour
1tbsp chia seeds
300ml warm water
2tsp dried yeast
12tbsp extra virgin olive oil
1 tsp sea salt
1tsp xylitol sugar
½ tsp Vitamin C
½ tsp xanthan gum

Combine all ingredients in the food processor. Transfer the dough (it will be sticky) with the spatula into a round medium, oiled bowl and cover with cling film.

Put the dough in a warm place for approximately an hour or longer. It can be even left overnight. Once the dough rises transfer it onto the oiled baking tray.

Bake in the oven for 50min on 356 Fahrenheit/ 180 Celsius.
