Goat’s Milk Chocolate and Bluberry Lassi

Goats milk chocolate lassiLassi is a traditional yogurt based drink in India and Pakistan but also very popular in Western Europe. It’s great as a morning drink or snack in the afternoon. During hot summers it can be very refreshing when chilled and served with ice.

Lassi can be savoury or sweet depending on mood and taste. This one is a very simple, sweet version made with chocolate and blueberries.

Ingredients for 3-4 serving:

1 large pot of plain yogurt, you can choose goat’s milk, sheep’s milk or ordinary yogurt
175g blueberries
1 tbsp honey
1 tbsp raw chocolate
pinch of sea salt
pinch of cayenne pepper

Put all ingredients in a blender and mix well.

Sweet Jungle

2014-11-27 07.13.55  Desserts made easy and packed with superfoods. Another sweet treat   with no gluten and no sugar, so you can eat as much as you like. The main ingredient in this dessert is yellow mango but the powerful colour of spirulina changes it to green. Spirulina is an ancient blue-green algae. It is a planet friendly source of protein, fibre, essential amino acids and minerals. This simple dessert is packed with iron, calcium, Vitamin E and chlorophyll and it tastes great!

To make 4-6 portions I have used the following ingredients:
1/2 cup almond milk or any other milk
1 mango
1 banana
1 tbsp spirulina
1 tbsp chia seeds
pinch of sea salt
pinch of cayenne pepper
goji berries to decorate
Place all ingredients in a blender. Blend until smooth for about 1minute. Pour the content into 4-6 ramekin dishes and decorate with goji berries or any other berries. Chill in the fridge before serving.

Chocolate Mousse

2014-11-20 05.31.11Desserts and sweet things can be enjoyed without guilt and damage to our health if they are made with non-harmful ingredients. This simple mousse contains no sugar and no flour but instead it’s packed with beneficial superfoods. One of which are bananas, now widely available in all corners of the world. These happy fruits contain tryptophan, which is converted to serotonin putting us in a good mood. Eaten before the workout they aid us in sustaining longer energy levels.

The high dosage of potassium protect us from having cramps and high amount of VitaminB6 calm the nervous system. They are great for digestion and often are used as first aid food after stomach upsets, constipation or diarrhoea.

To make 4 portions I have used the following ingredients:

3 bananas

1 tbsp chocolate powder

1 tbsp chia seeds

1 tbsp hemp seeds – optional

1 tbsp honey or maple syrup

pinch of sea salt

goji berries to decorate

Place all ingredients in a blender. Blend until smooth for about 1minute. Pour the content into 4 ramekin dishes and decorate with goji berries or any other berries. Chill in the fridge before serving.

Poppy Seeds Cake with Nuts

Poppy Cake

This is great dessert using poppy seeds, nuts and honey. In fact this “cake” is actually a filling for a traditional poppy cake but as I avoid gluten I have decided to use the best out of this cake.

You will need to break the poppy seeds first in a coffee grinder or a very powerful blender. Then just mix it with raw honey and a choice of nuts (hazelnuts, walnuts, almonds or pecan). You can also add raisins if you wish. The good things is that you don’t have to worry about the quantity of the ingredients; be inventive, you can’t go wrong.

You can eat the ready mixed poppy “cake” with your favourite ice creams. I have eaten mine with blueberries soaked in vodka!

Ingredients: poppy seeds, choice of nuts, raw honey, raisins (optional)
